Most of us love a nice hearty breakfast when we’re out on the road. Those lovely mornings where you wake up early to catch the sunrise, and if you’re lucky, the air is comfortable and the birds are singing. Take a moment and enjoy this beautiful picture nature is offering you, and savor your cup of coffee. Then, when you’re ready, surprise your loved ones with a delicious mountain breakfast prepared in your dutch oven. A feast that is fit for Paul Bunyan himself.
Here’s what you’ll need:
INGREDIENTS
- 1/2 pound bacon
- 1/2 pound herbed sausage, cooked and crumbled
- 1 medium onion, diced
- 1 2-pound bag hash brown potatoes, diced
- 1/2 pound sharp cheddar cheese, grated
- 1 dozen eggs
Now, if you’re like a few people we know, you’re going to want to add in some extra bacon and that’s just fine. Add in any extras you like! That’s the great part about experimenting with recipes… You can always tweak it a bit to make it your own. Just remember that if you add in, or take out a whole lot of extra ingredients your cooking time may change.
You’ll want to pre-heat a Dutch oven and then use 10 bottom coals and 12-15 top coals. Slice your bacon, sausage, and onion into small pieces, and brown them in the bottom of the Dutch oven. Next, stir in the potatoes and cover. Stir occasionally to brown potatoes (15-20 minutes).
You’ll want to scramble the eggs in a separate pan and pour the mixture over the hash browns. Cover and cook until eggs are set. Add grated cheese over egg mixture, cover, and continue heating until cheese is melted.
There you have it folks! By the time this tasty breakfast is ready your companions should be awakening from the delicious aroma and be ready to feast and all thanks to you and that sunrise you got up early to watch.
