In case you haven’t noticed, pumpkin lattes are out, which can only mean one thing…Fall is officially here! However, it isn’t just the lattes that are full of pumpkin. It’s pastries too, such as pumpkin scones, pumpkin muffins, and pumpkin bread. If you’re a huge pumpkin lover, then we’ve got a recipe that’s sure to get your gourd in a spin. We give you Pumpkin Pie Cobbler, as found on Scoutarama.com. Once we saw this recipe, we knew our RV traveling families would love it.
Here’s what you will need:
Ingredients
1 29oz. can of pumpkin
1 1/2 cups sugar
1 tsp. salt
4 large eggs
2 Tbs. pumpkin pie spice
2 12oz. cans evaporated milk
1 box yellow cake mix
1 stick of margarine or butter
Equipment
dutch oven
heavy duty aluminum foil (optional)
charcoal(optional)
tongs
lid lifter
charcoal chimney (optional)
Large mixing bowl
whisk
And here’s how to get it done:
Mix all ingredients except for cake mix and butter in large bowl with whisk. Line the inside of your dutch oven with foil and pour liquid into dutch oven.
Carefully sprinkle dry cake mix on top of the pie filling. Slice a stick of butter and spread the slices onto the top of the cake mix.
Cover your Dutch oven and begin the heating process.
It’s suggested you use eight charcoals on bottom and cover the top with coals. It all depends on the weather and dutch oven you have. Cook until cake mix turns golden brown. Serve warm or cold. We’d also like to suggest that this would be very tasty with some vanilla ice cream on top!
So, there you have it. Your very own Pumpkin Pie Cobbler. If you make this at the campsite, be prepared, you’ll probably have some visitors stopping by asking what the delicious smell is.
