Butterscotch Potato Chip Cookies. That’s right. Potato chips IN the cookies. These are a family favorite that combine the best of both worlds. Sweet and salty come together in perfect harmony in these delicious little treats. I have gotten many a sideways glance when I have mentioned this cookie, but I can guarantee, if you give it a try, you’ll never look back. These are simple to make, and are a staple in our holiday cookie baking tradition. In the spirit of giving, I thought I’d share with the masses. You’re welcome, people!
Here’s what you’ll need:
1 Cup packed brown sugar
1 Cup granulated sugar
1 Cup softened butter
2 eggs
2 1/2 Cups all purpose flour
1 tsp baking soda
1 bag butterscotch chips
2 ½ Cups crushed plain potato chips
Here’s how you do it:
Preheat oven to 350
Cream together sugars and butter
Beat in eggs
Add flour and baking soda
Fold in butterscotch chips and potato chips
Drop by spoonful onto ungreased cookie sheet
Bake for 8-10 minutes
