It’s National Cherries Jubilee Day ~ Celebrate With Dessert!

What exactly is Cherries Jubilee you ask? Well, it’s a simple and simply delicous dessert, and tonight is the perfect night to whip up this easy recipe for your cherry loving family. There are few ingredients involved, and the process is quite simple.  The original recipe is attributed to French chef Auguste Escoffie who prepared the dish for one of Queen Victoria’s jubilee celebrations. It is unclear for certain whether it first appeared at the Golden Jubilee in 1887 or the Diamond Jubilee in 1897, but it quickly became one of the most fashionable desserts of the era. For many years, cherries jubilee was a standard menu item at America’s finest restaurants, reaching the peak of its popularity in the 1950s and 1960s. It does have to be prepared just before serving, but lucky for you, It’s quite easy to make, takes just a few minutes, and needs only a few ingredients.


 

Here’s what you’ll need to make about 4-6 servings:

1/2 stick butter

1/4 cup sugar

1 tablespoon cornstarch

1 16-ounce can pitted cherries (you can use fresh or frozen)

1/4 cup brandy

Vanilla bean ice cream


Here’s how you do it:

Drain cherries, reserving all the juice.

Melt butter in a saute pan. Stir in cornstarch and sugar until smooth.

Gradually stir in the reserved cherry juice. The mixture will thicken up.

When it boils, pour in the brandy and turn off the heat.

Light the brandy in the pan with a lighter.

When the flame dies down, stir in the cherries and serve immediately over scoop of ice cream
