We love finding fun and interesting blogs from RV’ing families. Our recent favorite is the Lundy family and their blog, The Lundy 5. The Lundy’s are traveling the United States in their RV with their three children and Jack, the dog. They’ve been on the road for 1218 days (their website has a ticker so I know this). The Lundy’s blog offers a fun look at their RV lifestyle. Be sure to see Margie Lundy’s “The Housewife’s Guide to RV’ing” for a good giggle. They share tips, photos, many recipes, and so much more. They share personal stories such as the journey of the adoption of their first child in the Ukraine in 2001, and the adoption of their next two children in the USA in 2006, as well as their philosophy on roadschooling. We have taken one of their recipes to share with you here, but you should definitely take a peek at their blog, especially if you’ve ever thought about taking your family on the road full time. The Lundy 5 are living the life and they have so much great insight to share. As Allen Lundy calls it, they are “unlocating”. Not relocating, unlocating. Love it! Funky Frito Fruckies ~ Or as the Lundy’s call it, “Buckeye Crunch”
Here’s what you’ll need:
10.5 oz Frito corn chips
1 Cup granulated sugar
1 Cup light corn syrup
1 Cup creamy peanut butter
1 Bag milk chocolate chips
Here’s how you do it:
Gently crush chips up – not into small crumbs, just break them up a bit
Put them in a greased 9×13 pan
In a saucepan over medium heat, bring the corn syrup and sugar to a boil
Remove from heat and stir in peanut butter until smooth and creamy
Pour this mixture over the top of the chips an smooth it out with a rubber spatula
Melt chocolate chips and pour over the top and smooth again.
Allow to cool, cut into squares or break into pieces, and enjoy!
