My family loves it as a spring and summer side dish and it’s also perfect for family reunions, potlucks, and picnics. It uses a few fresh ingredients, a few canned ingredients, and comes together with a light dressing. Take a look below!
Cowboy Caviar
Ingredients
- 3 Roma tomatoes (remove seeds), diced
- 2 avocados, diced
- ½ red onion, diced
- 1 bell pepper (any color!), diced
- 1/3 cup fresh cilantro, finely chopped
- 1 jalepeno pepper (remove seeds), finely diced
- 1 15-oz can of black beans, rinsed and drained
- 1 15-oz can of black eyed peas, rinsed and drained
- 1 15-oz can sweet corn, drained
Dressing
- 1/3 cup olive oil
- 2 Tbs lime juice
- 2 Tbs red wine vinegar
- 1 tsp sugar
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp garlic powder
This easy camping recipe for Cowboy Caviar can be enjoyed as a side dish, or used as a dip – just break out a bag of tortilla chips!
Tools you’ll need
- Cutting board
- Sharp knife
- 2 mixing bowls – one small, one medium
- Spatula
- Whisk
- 12-16 oz jar with lid (optional)
Instructions
- Dice all fresh ingredients. Drain and rinse black beans and peas. Drain corn. Add all of these together in medium mixing bowl and mix well.
- In smaller bowl, whisk together the dressing ingredients. Pour dressing over the veggie mixture and mix well.
- Serve immediately or refrigerate until ready to serve, giving a good stir before serving.
- Make-ahead tip: the dressing can be whisked together and stored ahead of time. Combine the dressing ingredients, whisk well, and store in a jar that’s at least 12 oz. When ready, give it a swirl to re-mix and combine with diced vegetables.
